Attacked by the Zucchini Monster

I got home from work on Saturday to find a selection of items in my home that weren't there before. Mom stopped in on her way home from Wisconsin and left some kids books, a jar and a huge bag of zucchini. More than I could ever eat. She said whatever I didn't use I could just throw away, but I can't throw away food! Even if it is practically a weed! I made zucchini bread on Sunday, zucchini pancakes on Monday and am begging anyone I know to take the zucchini. If you want some please let me know. I have way too much of it.
